Honorary Knight Canon Timeline, but Abyss Princess is optional.

Lumine's canon age is unspecified and complicated. Pre-game she's a world traveling super being of some sort, equal to divine beings. At the beginning of Genshin Impact she's stripped of her powers and put into a coma for at least 500 years. Her sibling has been awake those 500 years without visibly aging, which confirms that whatever being she is doesn't apparently age. There are some hints and suggestions in the naming scheme and other things that imply she and her twin may be some kind of star children in vaguely human form, not actual humans. (Teyvatians are called 'human' in the game, and the twins are aliens, but it isn't clarified what they are)

I work on the assumption that physically she appears to be 17, because the drinking age in Mondstadt is confirmed to be 18, and characters seem not completely sure if she looks old enough to drink or not (Also Amber who is 18 has the same body type as Lumine). Given that it is a running joke that the Traveler is mildly exasperated by the fact that people won't let them drink, and that they've gotten drunk with Venti, it's likely that they are above the drinking age wherever they're from, but nobody in Teyvat believes them because nobody in Teyvat believes they're aliens who fell from the sky five hundred years ago.

TL;DR - Lumine is played as far beyond 18+ but with a physical appearance of somewhere around 18
